1) 2 cups pecans in a non stick frying pan
2 Tablespoons water
salt and pepper
one small pinch cayenne pepper
one small pinch nutmeg
stir the above ingredients over heat until the water is nearly all
evaporated.
2) Then add:
1 half cup brown sugar and 1 quarter cup butter. Cook until all melted
and caramelized.
3) Pour on a greased baking dish and roast in the oven
for at least 20 minutes at 250-300 degrees. (Normally, I just throw it
in the oven with whatever I have in there and watch them. So, they
can cook at different temperatures.) Take out and separate. Allow to
cool before using them on the salad.
