1) I normally rub it with butter, salt and pepper it, and cook it, stuffed, in a turkey bag.
2) The box the turkey bags come in will have instructions for the oven temp and the doneness of the bird.
3) I time to have it done an hour before the scheduled meal time. Leave it in the bag until you are going to cut it. And cover it with a dishtowel.
