Ingredient Qty. Unit
Costco Penne Pasta 1 Each
large tomato diced 1 Each
can of olives, halved 1 Each
cucumber, diced 1 Each
shredded monterey jack cheese 1 1/2 Cups
can black beans 1 Each
chopped artichoke hearts, 1 Cups
sun dried tomatoes 1/3 Cups
chopped yellow pepper 1 Each
heart of palm 1 Each
can of baby corn, chopped 1 Each
lemon 1 Each
salt and pepper 1 Each
olive oil 1/3 Cups
balsamic vinegar 3 Tablespoons
Directions
  1) Mix fist five ingredients (Basic recipe)
  2) Add next six ingredients (optional)
  3) Mix Lemon (squeezed), olive oil, vinegar, salt and pepper. Pour over salad.
  4) Optional: Add chopped salami or chicken to add protein.
  5) Note: If you make too far in advance it may dry out. Try adding a few Tablespoons of water.
