1) Heat oil.
2) Add chicken.
3) Fry on low heat tell the water in the chicken dries.
4) After the water dries, fry the chicken in the oil till it turns light brown.
5) Add salt, red pepper, ginger and garlic.
6) Cut tomatoes and add in the chicken.
7) Cover the wok/pot and cook at low heat.
8) Let the tomatoes cook and when you see the oil on the chicken, sprinkle fresh coriander and cilantro.
