Recipe: Breakfast Egg Pie Printer Friendly

Ingredient Qty. Unit
sweet potato, medium 1 Each
breakfast sausage 1/2 Pounds
rosemary, fresh 1 Teaspoons
eggs 10 Each
coconut milk 3 Tablespoons
salt & pepper, to taste 1/8 Teaspoons
Directions
  1) Preheat oven to 350 degrees.
  2) Add thin layer olive oil around sides and bottom of pie pan.
  3) Line pie plate w/ 1/8" thick potato disks overlapping the bottom of pie plate.
  4) Top w/ sausage layer and rosemary.
  5) Whisk egg, milk, salt and pepper.
  6) Pour over layers.
  7) Bake 25 to 30 min. or until center is set and the eggs have puffed up.
