Recipe: Clinton's Quinoa Salad Printer Friendly

Ingredient Qty. Unit
quinoa 1 Cups
vegetable stock or water 2 Cups
cucumbers, diced 1/2 Cups
tomato, diced 1/2 Cups
red onion, diced 2 Tablespoons
green onion, thinly sliced 2 Each
cilantro, chopped 2 Tablespoons
jalapeno, chopped 1 Teaspoons
olive oil, xtra virgin 3 Tablespoons
lemon juice, fresh 1 Tablespoons
Directions
  1) Cook the quinoa according to pkg directions, using stock of water. Cool completely.
  2) Combine all ingredients. Toss. Serve chilled.
