Ingredient Qty. Unit
butter 1/2 Cups
brown sugar (optional) 1/2 Cups
large bananas (mashed) 2 Each
jar (4.5 oz)baby food squash 1 Each
carrots, grated 2 Each
eggs, beaten 2 Each
flour 1 Cups
oat bran 1/2 Cups
baking soda 1 Teaspoons
pumpkin pie spice 1 Teaspoons
salt 1/2 Teaspoons
Directions
  1) Preheat an oven to 375 degrees F (190 degrees C). Grease 24 mini muffin cups or 12 standard muffin cups
  2) In a mixing bowl, cream together the butter and brown sugar until smooth. Mix in the mashed bananas, squash, carrots, and eggs. Stir in the flour, oat bran, baking soda, pumpkin pie spice, and salt until just combined. Spoon the batter equally into the prepared muffin cups
  3) Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack. Store at room temperature for up to two days, or freeze

Wendy  I've made these a few times and my toddler LOVES them. The first time I substituted sweet potatoes for the squash (because I had just cooked some)and added raisins. I never could find oat bran. Yummy! But, I wanted something with no sugar so the next time I made with whole wheat flour, added ground flax seed and some oatmeal. Instead of sugar I put two packets of Truvia. Just as Yummy, in fact I couldn't tell the difference and my toddler ate them up just as fast. In fact the dough tasted good before I added the Truvia so next time I might try without any sweetener. Stay tuned....

Ben  Just so everybody knows... these muffins are not made from actual toddlers. Just want that to be totally clear.
