1) Cut pita bread in 2" strips and from there cut into triangles or squares (about 2" on each side).
2) Pour oil into frying pan/pot filling it less than 1/2 way. Heat oil on high heat for couple minutes then test with one piece of pita bread....if it sizzles the oil is ready.
3) Fry serveral at a time until light golden brown...transfer onto paper towel and sprinkle w/ salt and sumac...also if you want another layer of flavor, spray w/ lemon juice.....or, if you like, sprinkle w/ cayenne pepper, too.
4) Note: You can also bake them in a 400 degree oven spread out on a cookie sheet drizzled with olive oil and sprinkled w/ salt and sumac until light golden brown.
