Jennie-O Itaian turkey sausage 1 Pounds
medium yellow onion 1 Each
minced garlic 1 1/2 Teaspoons
dried parsley 1 Teaspoons
italian seasoning 2 Teaspoons
salt 1/2 Teaspoons
paprika 1/2 Teaspoons
pepper 1/2 Teaspoons
chicken bone broth 3 Cups
Yukon gold potatoes in 1" cubes 600 Grams
zucchini, 1/4 sliced in half 450 Grams
med red bell peppers, diced 2 Each
curly kale, torn and stems removed 4 Cups
half and half (sub canned lite coconut milk for DF) 1/2 Cups
bacon, cooked and crumbled 2 Tablespoons
fresh basil 1 Teaspoons
Directions
  1) Spray a soup pot and cook onion about 5 minutes
  2) Add sausage and seasonings, breaking it up as it cooks (about 8 minutes)
  3) Add garlic and stir for 1 minutes
  4) Add broth, potatoes, zucchini, and red pepper.
  5) Turn heat to high, cover and bring to boil ( about 10 minutes)
  6) Reduce heat to mediumlow and boil until potatoes are fork tender ( about 3-5 minutes)
  7) Add half and half ( or coconut milk)and kale and stir until kale is tender( about 5 minutes)
  8) Taste and adjust seasonings as necessary.
  9) Top with bacon, fresh basil, and parmesan cheese if you like.
