1) Pour fava beans into a medium pot and bring to a simmer for about 10 minutes..turn off stove and cover w/ lid.
2) Finely dice/chop tomato, parsley and onion and set aside.
3) In mortar and pestle mash up garlic with salt until super mashed or use garlic press.
4) Spoon fava beans and 1/4 of the liquid into a large bowl. Lightly stir in mashed garlic, salt, lemon juice until evenly incorporated.
5) Place chopped onions in center of beans, then tomato on top of onions, then parsley on top of tomato.
6) Drizzle a generous amount of olive oil on top of fava beans around the onion, tomato and parsley.
7) Enjoy with pita chips, fresh heated pita bread or top toasted sliced ciabatta bread for your next brushetta party.
8) Also, good spooned over eggs in the morning or steamy rice at night. Can be eaten hot, warm or at room temp.
