Recipe: Spinach Tabouli Salad Printer Friendly

Ingredient Qty. Unit
8-12 oz. bag baby spinach 1 Each
bunch parsley, discard stems..wash and dry well 1 Each
#1 bulghur (cracked wheat size #1) 1/4 Cups
tomatoes, large dice 2 Each
Persian cucumbers or 1 large English 4 Each
white onion, small 1 Each
lemon juice (1-2 lemons) 1/4 Cups
olive oil 1/4 Cups
salt 1 Teaspoons
sumac 1 Teaspoons
mint sprigs 4 Each
lettuce or grape leaves to eat with (optional) 1 Each
Directions
  1) Finely dice tomatoes and cucumbers.
  2) Finely chop onion, parsley and spinach.
  3) Combine all ingrediented in a large bowl and toss.
  4) Remember salad is meant to be juicy - not dry.
