bunch parsley, discard stems..wash and dry well

#1 bulghur (cracked wheat size #1)

tomatoes, large dice

lemon juice (1-2 lemons)

olive oil

sumac

Teaspoons
mint sprigs

lettuce or grape leaves to eat with (optional)

Directions
1)
Finely dice tomatoes and cucumbers.
2)
Finely chop onion, parsley and spinach.
3)
Combine all ingrediented in a large bowl and toss.
4)
Remember salad is meant to be juicy - not dry.
