head romaine lettuce (large rustic chop) 1 Each
tomatoes, large dice 3 Each
Persian cucumbers or 1 lrg. English, large dice 4 Each
bell pepper, red, yellow, or orange, large dice 1 Each
mint springs (rustic chop..discard sprigs) 4 Each
bunch parsley (rustic chop, discard sprigs) 1/2 Each
small red onion, sliced 1/2 Each
purslane bunch (leaves...discard stems) 1 Each
handful pita chips 2 Each
olive oil 1/4 Cups
sumac 1 Teaspoons
salt 1 Teaspoons
lemon juice (1-2 lemons) 1/4 Cups
Directions
  1) In a large bowl combine all veggies, parsley, mint and purslane. Gently place pita chips on one side. Sprinkle salt and sumac on both veggies and chips.
  2) Drizzle oil and lemon juice on veggie side....gently toss and taste. Eat immediately or else pita chips soften up.
  3) Note: You do not need to skin Persian or English cucumbers because the skin is thin and there are few seeds.
