1) In a large bowl combine all veggies, parsley, mint and purslane. Gently place pita chips on one side. Sprinkle salt and sumac on both veggies and chips.
2) Drizzle oil and lemon juice on veggie side....gently toss and taste. Eat immediately or else pita chips soften up.
3) Note: You do not need to skin Persian or English cucumbers because the skin is thin and there are few seeds.
