small to medium pumpkin 1 Each
onion, chopped 1 Each
vegetable oil 2 Tablespoons
ground beef 2 Pounds
soy sauce 2 Tablespoons
brown sugar 2 Tablespoons
can (4-oz) sliced mushrooms, drained 1 Each
can (10-3/4oz) cream of chicken soup 1 Each
cooked rice 1 1/2 Cups
can (8-oz) can sliced water Chestnuts 1 Each
Directions
  1) Cut off the top of pumpkin and thoroughly clean out seeds and pulp.
  2) Paint an appropriate face on the front of the pumpkin with a permanent marking pen or acrylic paint.
  3) Preheat oven to 350 degrees
  4) In a large skillet, saute onions in oil until tender. Add meat and brown.
  5) Drain drippings from skillet. Add soy sauce, brown sugar, mushrooms, and soup. Simmer 10 minutes, stirring occasionally.
  6) Add cooked rice and water chestnuts. Spoon mixture into cleaned pumpkin shell. Replace pumpkin top and place entire pumpkin, with filling, on a baking sheet.
  7) Bake 1 hour or until inside meat of the pumpkin is tender.
  8) Put pumpkin ona plate. Remove pumpkin lid and serve meat. For your vegetable, scoop out cooked pumpkin and serve.
