Ingredient Qty. Unit
Red Potatoes (4 or 5) 1 Each
Zucchini (1-2 depends on the size) 1 Each
Tomatoes (4 or 5) 1 Each
Olive Oil or Butter 2 Tablespoons
Salt and Pepper (Add to taste) 1 Pinches
Grated Cheese (1-2 Cups) 1 Cups
Directions
  1) Slice up the Red Potatoes. Cut them evenly and not too thick or too thin. Cook in Olive Oil or Butter. (Sometimes I add a little water to help cook the potatoes faster).
  2) Slice the Zucchini. When the potatoes are completely cooked through add the Zucchini. The heat can be turned down some since the Zucchini will cook quickly.
  3) Slice the Tomatoes. When the Zucchini is almost cooked through put a layer of tomatoes on top of the potatoes and zucchini. Let the Tomatoes cook. Use the lid to help steam the vegetables.
  4) When the Tomatoes have warmed up add your grated cheese on top.
  5) Make sure to add salt and pepper to taste on each step (potatoes, zucchini, tomatoes). Serve with toast.
