Ingredient Qty. Unit
rice wine vinegar 1/4 Cups
fresh lemon juice 3 Tablespoons
plain yogurt 2 Tablespoons
dry mustard 1/4 Teaspoons
garlic powder 1/2 Teaspoons
sugar 1 Teaspoons
salt 1/2 Teaspoons
pepper 1/2 Teaspoons
olive oil 2 Tablespoons
vegetable oil 1/2 Cups
(Hand full) Fresh Herbs (basil, parsley, chives) 1 Tablespoons
fresh tortellini (I like the 3 cheese kind) 3/4 Pounds
fresh green beans (cooked) 1/2 Pounds
cherry tomatoes 1/2 Pounds
fresh Parmesan Cheese (I put in more than 2 TBL) 2 Tablespoons
Directions
  1) Mix the following ingredients together to make the dressing (I mixed in a blender): vinegar, lemon juice, yogurt, dry mustard, garlic powder, sugar, salt, pepper, olive oil, vegetable oil (I used more olive oil and less vegetable), herbs (I used dried since that's all I had. I didn't put exactly one Tablespoon, but probably around that.) Set aside/refrigerate.
  2) Cook Tortellini. I buy the three cheese kind at Sam's Club.
  3) Cook the green beans. Be carefully not to make them too mushy. My mom cooks her green beans in the electric pressure cooker for 3 minutes with a quick release and that seems to be about right. Let cool.
  4) Slice cherry tomatoes in half.
  5) Combine cooled tortellini and green beans. Add tomatoes. Add the dressing. Then add as much parmesan cheese as you like. Toss before serving.
