Ingredient Qty. Unit
water 2 1/4 Cups
rice (not instant) 1 Cups
"Better than Bouillon" chicken base or two chicken bouillon cubes 2 Teaspoons
garlic, minced 2 Teaspoons
bunch cilantro, stems removed 1/2 Each
can (4oz) diced green chillies 1 Each
juice of a fresh lime 1/2 Each
butter 1 Tablespoons
yellow onion 1/2 Each
Directions
  1) Put all ingredients, except rice and water in a food processor and process until well combined. Bring water to a boil in a medium-sized sauce pan over high heat and then add rice and processed mixture.
  2) Reduce heat to low and simmer for 25 minutes.
  3) Toss with a fork and allow to cool slightly if using for salad. If using for a side dish, serve hot.
  4) This recipe serves 4 if served as a side dish, if used in the salad it serves 6.
