Recipe: Honey Lime Chicken Enchiladas Printer Friendly

Ingredient Qty. Unit
honey 6 Tablespoons
lime juice 4 1/2 Tablespoons
chili powder 1 Tablespoons
garlic powder 1/2 Teaspoons
cooked chicken 1 Pounds
flour tortillas 1 Each
colby or monterey jack cheese, shredded 1 Each
10 oz can green enchilada sauce 1 Each
Directions
  1) Mix first 4 ingredients together and toss with shredded chicken.
  2) Let marinate for at least a half hour.
  3) Pour some green enchilada sauce on the bottom of a 10x10 casserole dish or 9x13 pan.
  4) Fill flour tortillas with chicken and shredded cheese. Pour the rest of the sauce over enchiladas then sprinkle with more cheese. (When using a 9x13 I like to use 1 1/2 10oz. can of sauce)
  5) Bake at 350 degrees for 30 min. (Put it under the broiler at the end to make the cheese brown and crispy on the top)
