Ingredient Qty. Unit
eggs large 3 Each
flour 3 Cups
sugar 2 Cups
salt 1 Teaspoons
cinnamon 1 Teaspoons
baking powder 1 Teaspoons
baking soda 1 Teaspoons
vanilla 2 Teaspoons
salad oil 1 Cups
coconut 1 Cups
nuts 1/2 Cups
zucchini, raw and grated 3 Cups
Directions
  1) Combine all ingredients in order given.
  2) Butter two 9" x 5" loaf pans generously.
  3) Pour batter and bake at 325 degrees for one hour or until toothpick comes out clean.
  4) Frosting:
  5) 1/4 c. butter
  6) 1 8-oz. softened cream cheese
  7) 1 3/4 powdered sugar
  8) 1 tsp. vanilla
