Ingredient Qty. Unit
boneless chicken breast 8 Ounces
olive oil 1 Tablespoons
onion, chopped 1/4 Cups
garlic cloves, minced 2 Each
cumin, ground 1 Teaspoons
salt 1/2 Teaspoons
chili powder 1/2 Teaspoons
red pepper 1/8 Teaspoons
chicken broth, low fat 4 Cups
can corn 15 Ounces
can black beans 15 Ounces
can Mexican stewed tomatoes 14 1/2 Ounces
Directions
  1) Saute chicken in olive oil. Cook chopped onion, garlic, cumin, salt, chili powder and red pepper w/ chicken.
  2) Stir in low-fat chicken broth, undrained corn, stewed tomatoes and drained black beans.
  3) Boil. Reduce heat and simmer for 15 min.
