packed light brown sugar 1 Cups
lg eggs 2 Each
pure pumpkin 1 Cups
canola oil 1/4 Cups
low-fat plain yogurt 33333/100000 Cups
vanilla extract 1 Teaspoons
flour 1 Cups
whole wheat flour 3/4 Cups
baking powder 1/2 Teaspoons
ground cinnamon 1 Teaspoons
ground nutmeg 1/2 Teaspoons
baking soda 1/2 Teaspoons
salt 1/2 Teaspoons
Directions
  1) Preheat oven to 350 degrees. Spray 8 1/2 inch by 4 1/2 inch metal loaf pan with nonstick cooking spary with flour.
  2) In a large bowl, wire whisk, combine brown sugar and egg whites. Add pumpkin, oil, yogurt, and vanilla. Stir to combine.
  3) In medium bowl, combine flour, WW flour, baking powder, cinnamon, nutmeg, baking soda, and salt. Add flour mixture to pumpkin mixture; stir until just combined. Do not overmix.
  4) Pour batter into prepared pan. Bake 45-50 min or until toothpick inserted comes out clean. Cool pan 10 min. Invert bread onto wire rack to cool completely.
  5) Each serving(16 servings)
  6) 140 calories, 2 g protein, 25 g carbs, 4g fat, 1 g fiber, 165 mg sodium
