Recipe: Sausage/Bean Italian Soup Printer Friendly

Sweet Italian Turkey Sausage 1 Pounds
crushed red pepper 1/2 Teaspoons
garlic cloves minced 5 Each
fresh spinach pkg 10 Ounces
chopped tomatoes 2 Cups
15-oz can cannelli white beans undrained 2 Each
chicken broth 3 Cups
parsely chopped, divided (optional) 2 Tablespoons
pepper 1/4 Teaspoons
salt 1/4 Teaspoons
butter 1 Tablespoons
parmesan cheese grated 1/2 Cups
Directions
  1) Remove sausages from sausage casings and place in pan. Cook med/high for about 10 minutes or until cooked all the way through.
  2) Add red pepper and garlic and cook for two minutes.
  3) Add spinach and sautee about three minutes or until spinach wilts.
  4) Add undrained beans and cook 1 minute.
  5) Add broth. Bring to a boil and reduce the heat to medium.
  6) Add parsley, tomatoes, butter, grated parmesan, salt and pepper. Cook until thoroughly heated.
  7) Ladel into bowls and sprinkle with remaining parsley.

Wendy  This was originally a Weight Watchers recipe. You can of course use regular sweet italian sausage instead of Turkey sausage. I found the easiest place to find the turkey sausage is at Target. I have found it at other grocery stores, but its always been hit or miss. Target has been the most consistent. Oh, and I almost never have Parsley, so I leave it out and never noticed any difference.

Ben  We frequently prepare this soup with approximately three times the crushed red pepper and twice the spinach. Yum.
