Ingredient Qty. Unit
Olive Oil 3 Tablespoons
Riced Cauliflower 2 Cups
Garlic Powder 2 Teaspoons
Salt 1 Teaspoons
Black Pepper 2 Teaspoons
Frozen Stir Fry Veggie Mix 1 Cups
7 oz can diced green chiles 1 Each
10.5 oz Can Cream of Chicken 1 Each
Costco Pre-seasoned Pork Medallions 5 Each
Tomato 1 Each
Parmesan 1/4 Cups
Cheddar 1/4 Cups
Directions
  1) Preheat oven to 400 F.
  2) In large casserole dish, spread riced cauliflower & olive oil.
  3) Dice tomatoes
  4) Slice medallions
  5) In bowl, mix green chiles, cream of chicken, vegetables, tomato, pork medallions, garlic powder, black pepper and salt.
  6) Spread mixture over riced cauliflower.
  7) Top with parmesan and sliced/grated cheddar.
  8) Cook covered for 45 min
  9) Uncover casserole and continue cooking till cheese is light brown
