1) Heat oven to 400 degrees F.
2) Pat the chicken dry and rub or spray w/ oil. Sprinkle w/ seasonings. (My favorites are Kick'n Chicken or chili powder.) You can also tuck herbs or lemon wedges around the chicken for extra flavor,
3) Transfer to baking pan. Tuck the edges of the parchment paper down so that it's snug around the chicken. (I use a silicone sheet) The breasts should be completely covered.
4) Bake for 30 to 40 minutes until the chicken is completely opaque all the way through and registers 165 degrees.
5) Serve the chicken immediately, or let it cool and refrigerate for up to a week.
