Recipe: Lentil Soup with Coconut Milk Printer Friendly

onion, chopped 1 Each
garlic cloves, minced 2 Each
salt and pepper, to taste 1 Each
curry powder 1/2 Teaspoons
vegetable broth or water or chicken broth 1 1/2 Cups
red lentil, rinsed 1/2 Cups
carrots, peeled and chopped 3 Each
14 oz. can full-fat coconut milk 1 Each
Directions
  1) Saute onion. Add garlic, salt and pepper, curry powder. Continue to saute until fragrant (1 min.)
  2) Add vegetable stock, lentils carrots (1" slices), coconut milk. Boil and simmer 20 min.
  3) Puree all ingredients.
  4) Serve with toppings of Greek Yogurt and cilantro if desired.
