1) Preheat oven to 375 degrees F.
2) USE PAPER LINERS
3) In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar. Stir the oil mixture and remaining ingredients into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared paper liners.
4) Dont overmix batter, fold slightly
5) Sprinkle with streusel topping and bake.
6) Streusel topping:
1/3 c brown sugar
1T flour
1T butter
1/4 Teas cinnamon
7) Bake 25 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely.
