1) The night before apply rub.
2) Smoke at 150 degrees for 3 to 4 hours.
3) After initial smoke tightly wrap each rack separately in aluminum foil.
4) Cook at 180 to 200 degrees for another 6 hours. This can be done in the oven or the smoker. Cook longer for "fall off the bone."
5) Remove from foil and lather entirely with BBQ sauce. Cook for a few minutes at 350 degrees.
