1) Bring roast to room temperature (take it out of the fridge and leave it on the counter).
2) Anytime before cook time rub the roast in olive oil, salt and pepper. I like to cover completely with oil and use salt fairly generously. I use pepper very sparingly.
3) About four hours prior to ready time, preheat smoker to 250 degrees.
4) Cook the roast to an internal temperature of 155. This will take about 3 hours and a bit for a 3 pound roast.
5) Remove from smoker and let rest for ten minutes.
6) You can roast as many roasts together as you have space for on the smoker.
