Recipe: Broccoli Cheese Soup Printer Friendly

Ingredient Qty. Unit
vegetable stock 3 Cups
broccoli florets, chopped 4 Cups
onions, chopped 1 Cups
carrot, chopped 1 Each
salt 1/2 Teaspoons
pepper 1/4 Teaspoons
garlic cloves, minced 3 Each
half-and-half 3 Ounces
cheese, shredded, reduced fat 4 Cups
parsley (optional) 1/4 Cups
Directions
  1) Combine veg. stock, broccoli, onion, carrot, salt, pepper and garlic in large saucepan and bring to a boil. Reduce heat and simmer until broccoli is tender.
  2) Turn off heat. Mix soup with hand blender (or pour into blender) until smooth. Immediately stir in creamer, cheese and parsley. Then serve.
