1) 1. Spray silicon muffin tins with oil, then place leftover vegetables in the bottoms.
2) Pour scrambled and seasoned eggs (Dr. Oz used thyme) over top of vegetables. Fill no more than 3/4 full.
3) 3. I put feta cheese on top. (optional)
4) Bake 350 degrees in oven for 20-25 minutes or until eggs are set.
5) Great way to use up leftover vegetables. I used large muffin tins, 16 oz. eggs whites + 2 eggs, and that yielded 9 servings.
