Ingredient Qty. Unit
salt and pepper, to taste 1 Each
green beans, trimmed 1 1/2 Pounds
Dijon mustard 1 Tablespoons
sherry vinegar (nutty). I used champagne vinegar (citrusy) 2 Tablespoons
olive oil, extra virgin 3 Tablespoons
almonds, sliced and toasted 1/2 Cups
Directions
  1) Boil a large pot of water. Add i Tbsp. salt and the green beans and cook until very tender, 6 to 8 min. (I steamed frozen gr. beans from Costco.)
  2) Whisk together the mustard, vinegar, oil, 1/4 tsp. salt and 1/4 tsp pepper.
  3) Drizzle over green beans. Sprinkle with almonds.
