quick oats 1 Cups
flour, gluten free 1 1/2 Cups
xanthan gum 1 Teaspoons
baking soda 1 Teaspoons
cinnamon, ground 1/2 Teaspoons
salt 1/2 Teaspoons
butter, softened 1/2 Cups
erythritol 1 Cups
vanilla liquid stevia 1 Teaspoons
vaniilla extract 1 Teaspoons
eggs, beaten 3 Each
sugar free chocolate chips or unsweetened carob chips 1 Cups
Directions
  1) Preheat oven to 350 degrees. Whisk first 6 ingredients together in a bowl.
  2) Place butter, erythritol, stevia extract, and eggs in a stand mixer and blend.
  3) Gradually pour dry ingredients into wet ingredients in the mixer and blend until batter is combined well. Stir in chocolate ships.
  4) Use a small cookie scoop to place cookie dough on a parchment-lined baking sheet.
  5) Bake 15 minutes. Let cool.
