1) Microwave cauliflower in a covered microwavable container for 3 - 4 minutes. Set aside.
2) Saute onions, garlic and ginger in sesame oil over medium heat until onion is softened and translucent. Stir in carrots and peas. Pour in beaten eggs and continue to cook until eggs are scrambled.
3) Add brown rice and cauliflower to egg mixture and stir to combine. Add rice vinegar or soy sauce and any cooked protein. if desired. Season with salt and pepper as needed and top with scallions, if desired
