1) Lay drained chickpeas on a paper towel to dry for 30 minutes. Preheat oven to 400 degrees.
2) Place 1 Tablespoon coconut oil in a bowl, add chickpeas, and toss. Add salt, garlic, and parmesan. Add cayenne and curry if desired. Stir to coat.
3) On a baking sheet, spread chickpeas out, not overlapping them. Drizzle 1 more tablespoon melted coconut oil over the chickpeas.
4) Bake for 20 minutes, stir, and continue to bake and stir for up to an hour, until crispy.
