Recipe: Garlic Parmesan Roasted Chickpeas SF Printer Friendly

Ingredient Qty. Unit
cans (15.5 oz) chickpeas, rinsed & drained 2 Each
coconut oil, melted & divided 2 Tablespoons
salt 1/2 Teaspoons
garlic, minced 1 Teaspoons
Parmesan cheese, grated 1/2 Cups
cayenne or curry, optional 1 Each
Directions
  1) Lay drained chickpeas on a paper towel to dry for 30 minutes. Preheat oven to 400 degrees.
  2) Place 1 Tablespoon coconut oil in a bowl, add chickpeas, and toss. Add salt, garlic, and parmesan. Add cayenne and curry if desired. Stir to coat.
  3) On a baking sheet, spread chickpeas out, not overlapping them. Drizzle 1 more tablespoon melted coconut oil over the chickpeas.
  4) Bake for 20 minutes, stir, and continue to bake and stir for up to an hour, until crispy.
