coarsely chopped curly kale, ribs removed 4 Cups
clementines, segmented and pith removed 2 Each
cherry tomatoes 1/2 Cups
avocado, sliced 1/2 Cups
feta cheese, crumbled 1/2 Cups
pumpkin seeds 2 Tablespoons
DRESSING 0 Each
lemon, juice and zest 1 Each
clementine, juice and zest 1 Each
shallot, grated 1 Tablespoons
olive oil 2 Tablespoons
salt 1/2 Teaspoons
pepper 1/4 Teaspoons
Directions
  1) Place kale in a large bowl. Toss with tomatoes, avocado, feta and pumpkin seeds.
  2) In a small bowl whisk together dressing ingredients and toss into salad.
  3) If making this in a mason jar, assemble as follows; dressing on bottom, add kale, tomatoes, avocado, feta and top with pumpkin seeds.
