chicken breast 1 1/2 Pounds
diced tomatoes, 15 oz. can 1 Each
green chili enchilada sauce 16 oz. can 1 Each
green chiles, chopped and mild, cans 4 oz. 2 Each
pinto beans, rinsed & drained, can 15 oz. 1 Each
black beans, rinsed & drained, 15 oz. can 1 Each
onion, chopped and medium 1 Each
garlic, minced 2 Tablespoons
water 1 Cups
chicken broth, 15 oz. 1 Each
limes, juice only 2 Each
cumin 2 Teaspoons
chili powder 2 Teaspoons
salt & pepper, to taste 1 Each
sweet corn, drained, 15 oz. can 1 Each
cilantro, (optional) 2 Tablespoons
cheddar and jack cheese to taste 1 Each
ff sour cream for garnish 1 Each
Directions
  1) In crockpot combine all ingredients except cilantro, cheese, and sour cream.
  2) Cover and cook for 8 hours.
  3) Take chicken breast out and shred w/ fork.
  4) Return shredded chicken in crockpot and cook for 15 more minutes.
  5) Serve w/ cilantro, cheese and sour cream, if desired.
